Easy Breakfast Egg Cups

These easy breakfast egg cups are the perfect grab and go make ahead breakfast! I’m not the person that can eat eggs for breakfast everyday, but Dave loves eggs for breakfast so these are a staple in our home. But these are so good I’ll make these for him and will sometimes find myself sneaking one, because it’s so quick and easy. If you leave out the cheese these are Paleo & Whole 30 compliant, even with the cheese they are still low carb/Keto.

The Ingredients

The best thing about this recipe, it’s only 2 or 3 ingredients. How great is that?!

  • Ham – You want to make sure that you are using high quality ham, to keep it Paleo/Whole 30. Cold cuts can be totally processed, and filled with all kinds of nasties. My go-to brand for whole 30 compliant meats and cold cuts is applegate. This is not a sponsored post, I just really stand behind their quality. You can also swap out the ham for bacon.
  • Toppings- If not Whole 30/Paleo, feel free to add cheese on top. Everything but the bagel seasoning is also my one of my go-tos for these. You can never wrong with a little hot sauce, or even salsa and avocado!

The other time saving tip I have, is sometimes instead of scrambling all the eggs, I will just crack one egg in each of the muffin trays. They don’t come out as pretty, but taste exactly the same, so if you want to save an extra dish and about 3 minutes, feel free to try this method 🙂

Easy Breakfast Egg Cups

These delicious egg cups can be made in batches ahead of time for quick grab and go breakfast throughout the entire week.

Cook Time 12 mins
Course Breakfast

Servings 10 Cups

Ingredients
  

  • 10 Eggs
  • 5 Slices Ham
  • 5 Slices Cheese

Instructions
 

  • Preheat oven to 350. Prepare your muffin tin with silicone muffin cups (can grease them or use one time use muffin cups instead).
  • Cut the Ham and Cheese slices in half, place 1/2 a slice of ham in each muffin tin. Scramble the eggs in a large mixing bowl, and pour into each muffin cup. Top with cheese.
  • Bake at 350, for 12 minutes. Top with everything but the bagel seasoning or hot sauce. Can be kept in the fridge and reheated throughout the week.
