I’m so excited to be on Danielle’s blog today to share some of my favorite Easy & Delicious Gluten Free Recipes with you!! My blog, EmilyFabulous.com, has quick and easy dinner recipes, dessert recipes and cocktail recipes. Not everything I do is Gluten-Free, but I like it when it happens. I have tried to be more gluten aware as I get older and also want to be good to my body.
My purpose for having a food blog is to inspire others to “just go for it” in the kitchen and try new things. I think a lot of people are afraid to try new things or get stuck in a rut. One of the best feelings is to be able to present something delicious to family or friends (or yourself!) from the kitchen. Not everything has to be completely from scratch, but it usually tastes better when at least part of it is.
Benefits of Gluten Free
You don’t have to be 100% Gluten-Free to be able to take advantage of some of the benefits of eating Gluten-Free, even if it’s only some of the time. Here a few examples:
- Improves cholesterol levels
- Promotes digestive health
- Increases energy levels
- Improves the health of people with certain long-term health issues
The other thing about Gluten-Free dishes that I don’t think everyone realizes, is they can be pretty tasty. There are also times you may not even realize your dish is Gluten-Free. Here are some of my recipes that promote eating Gluten-Free but also taste delicious!

Chicken Broccoli Quinoa Bake
A Gluten-Free Chicken Broccoli Quinoa Bake that is protein-packed, delicious and has tons of cheese and bacon! You can bake everything in your cast iron skillet and you’ll have dinner ready in no time!! I’m becoming a fan of one-pan meals mostly because they are usually quick and easy. There are also fewer dishes to clean and I’m all for that! Chicken, broccoli and cheese are staples in my house. We always have them on hand so I was looking for something new to make. Quinoa is a great way to get huge nutrition and health benefits from one ingredient. Recipe HERE
These coconut flour madeleines started out as a test and ended up being so good I decided to share my experiment. Dipped in white chocolate and toasted coconut, these mini treats are AMAZING with coffee or just by themselves! To make true madeleines you need a madeleine pan. But don’t fret! If you don’t have one, you can use a mini cupcake pan and get the same delicious result. Recipe HERE.
Instant Pot Kalua Pork
Instant Pot Kalua Pork is one of my favorite recipes that has only three ingredients and is ready in 90 minutes! There is no shredding needed since this pork literally falls apart while cooking and is ready to serve out of the pot. You have to make this ASAP! No, this is not the espresso rum Kahlúa you might be thinking of. Kalua literally means “cooked in an underground oven” and is a traditional Hawaiian dish that takes many hours to make. Thankfully, there is an easier way to achieve the same great taste without having to grab a shovel. Once you have this amazing shredded pork ready, the serving possibilities are endless. If you don’t have an Instant Pot or electric pressure cooker you can also make this recipe in your slow cooker. Recipe HERE.
Healthy Shrimp Ceviche
If you love fresh meals and seafood, here is a Healthy Shrimp Ceviche recipe you can make at home any day of the week. This recipe is perfect for backyard get-togethers, chips and salsa time or a healthy weekday dinner. There are tons of fresh veggies, fresh citrus juice, fresh herbs, and, of course, shrimp! Classic ceviche uses fresh citrus juice to “cook” the shrimp. IT makes for fresh and juicy shrimp. If you aren’t comfortable with this method, you can always use pre-cooked shrimp instead. Most of my recipes are pretty versatile, so if you don’t like shrimp or maybe have a shellfish allergy, you can also use fresh fish for ceviche. Recipe HERE.
Instant Pot Lavender Cheesecake
When I first got my Instant Pot, I flipped through the cookbook that came with it and saw that you could make cheesecake?!?!? I was intrigued and a little skeptical and had to try it for myself. I decided to make a lavender cheesecake because I love lavender and why not? ?????The crust on this cheesecake is 100% Gluten-Free and 200% amazing!! It’s made from almond flour, honey and butter. So, of course, it’s crazy good. And, if you have never baked with lavender, I highly recommend it. It’s such a fragrant and beautiful flower but adds a very subtle aroma to dishes that you can’t get from anything else. Just like my Instant Pot Kalua Pork recipe, if you don’t have an Instant Pot or electric pressure cooker you can also make this recipe in your oven. Recipe HERE.

This Grapefruit Tequila Cocktail is my favorite cocktail right now! It is inspired by a photo I saw of a cocktail from a bar in SF called Trick Dog. There were only a few ingredients in the description so I took what I could from it and came up with an amazing tequila cocktail that will impress everyone! Think Sophisticated Margarita! The real winner in this cocktail is the freshly grated cinnamon on top of the foam. The aroma and taste add a spiciness to this drink that is definitely unique. Recipe HERE.
