This Air Fryer Cod Piccata is a new twist on the Italian classic Chicken Piccata. It’s Whole 30, Paleo and Low carb friendly. The best part about this dish is that it’s cooked in aluminum foil packets, so there is virtually no clean-up. If you don’t have an air fryer, you can also bake these in the oven or throw them on the grill. Since Cod has such a subtle flavor, it perfectly absorbs the brightness of the lemons and saltiness of the capers. This meal goes from fridge to table in less than 15 minutes! Sunday Funday! What I wouldn’t give to be at a brunch al fresco with friends right now. Dave and I are going to take a walk to the park in a bit, hopefully it’s not too crazy. It’s still Sunday Funday for me because my all time favorite trashy TV show 90 Day Fiance is on! The absolute best 2 hours of the week! They always save the best TV for Sundays, Billions, Succession. I used to spend Sundays meal prepping for the week, one silver lining of all of this is that there isn’t a need to meal prep, because we have time to cook fresh meals every day 🙂 Speaking of fresh meals, my herb garden kit comes in tomorrow! We just watched Cuomo’s press conference, 78 days! That’s how long NY has been shut down. It’s hard to believe that it’s been that long, it’s also hard not knowing how much longer remains. NYC is going to be one of the last places to open back up again. But I wonder what kind of shape everything will be in when that happens. How many small businesses will remain? Such scary times for everyone. Cuomo mentioned that the amount of people suffering from anxiety and depression has skyrocketed since this started. Firstly this is a topic not getting nearly enough attention so I’m glad I brought it up. Secondly, I was incredibly that he gave a free hotline for people who need help. I Cod Eat This Everyday

I love seafood, all seafood. Except for Sushi and Salmon. I know, I know, how can I love seafood but not Sushi and Salmon, two of the most popular fish meals on the planet? I had never had Sushi growing up, and when I went away to college, one of the girls in my hall found this out and immediately dragged me to the cafe to try Sushi. Yup, Sushi from a college cafeteria, you can imagine what happened, I got food poisoning for three days straight. I thought I was going to die! The salmon story, well, that was a bottomless boozy brunch that unfortunately had a bottom.. my rock bottom lol. It’s been years and years, but still can’t even touch either.

But other than that, I eat all the seafood, and Cod is one of my favorites. It’s great because it really absorbs the flavors of whatever you add to it. I love that this recipe cooks right in the foil packet, so there is no cleanup. The capers bring a welcome saltiness to this fish. The lemon brightens it up, and the herbs add the perfect amount of freshness.

Wild Caught Vs. Farm Raised

Fish is often a favorite of those wanting to make their diets a little healthier. And, for a good reason, fish tend to be low in calories, high in protein, and high in healthy omega 3‘s. Farm raised vs. Wild caught is exactly what it sounds like. There are two ways to catch seafood. One involves raising fish in small, often cramped pens and the other implies catching them in their wild habitat. About 50% of all fish eaten by consumers is farm raised that numbers projected to grow to 2/3 by the year 2030.

However, there are many questions about which is more sustainable for the environment, and each has its pros and cons. This frequently cited study shows that farm raised fish have higher levels of PCB’s, a potentially carcinogenic chemical. However, depending on where the wild caught fish are from, they can contain many toxins as well. They often feed farm raised fish ground-up fish parts, since they don’t have the algae. When this happens, the fish don’t produce the same amount of Omegas that wild caught fish have. Farm fish tend to have a bit more fat in their diet, so they might be more tender or softer compared to a wild-caught fish, which might be a little leaner. If you want the best fish for your health and the environment, make sure you get sustainably sourced wild caught fish.

  • If you don’t have an air fryer, you bake it in the oven at 400 for 10 minutes or put the foil packets on the grill. If you don’t have an air fryer, trust me you need one. This is the one that I have below, and I absolutely love it.

  • Make sure you preheat your air fryer. The same way you would a regular oven. 
  • You can also sub olive oil for ghee or avocado oil. 
  • Both parsley and dill work great in this recipe.
  • Make sure after you squeeze the lemon you cut it and place it on top of the fish.

Air Fryer Cod Piccata

A twist on classic Chicken Picatta, this simple recipe is healthy Whole 30, Keto and Paleo friendly. Since they're cooked in the aluminum foil there is virtually no clean up.

Equipment

  • Air Fryer
  • Aluminum Foil

Ingredients
  

  • 2 Cod Filets
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Capers
  • 1 Lemon juiced
  • 1 Tablespoons Parsley or Dill

Instructions
 

  • Preheat Air Fryer at 390 degrees for 5 minutes. As it preheats, place the cod filets on a sheet of aluminum foil that you can fold over each other to make a foil packet. Salt & pepper each filet, add 1/2 tablespoon of oil to each filet, add the 1/2 tablespoons capers to each cod. Then separate the lemon juice between the two pieces of fish. Add the parsely or dill. Slice the lemon and place slices on top of each filet. Fold the foil so the each piece is now it's own little pocket.
  • Add the two packets to the air fryer, and "Air Fry" at 390 for 8 minutes. Remove the foil packets from the Air Fryer, and open, serve.
